How to make Delta Banga Soup.
This is made from palm fruit, it’s a traditional and local delicacy, if made well you bring smile to the faces of people around you who would eat your yummy meal.
- Wash your palm fruit and put them into a pot, add water enough to cover the palm fruit and boil for about 20-25mims
- When soft, transfer to a sieve to take out the water. Then transfer them to a mortar and pound softly until the skin separate from the nut
- Add in hot water enough to extract the juice from the Skin, press and massage the skin untill the juice is out leaving the skin to just just chaff and nut! Add another water but this time a little and to rinse of the chaff incase there's still juice in it. Transfer the the liquid into a pot and boil put on the heat to boil the juice
- While boiling the juice, blend your pepper and onions and add to the Banga (the juice will now be called Banga)
- Add in your Crayfish
- Add in your Stockfish and Dryfish
- Add in your meat and kpomo ( I used goat meat and cow skin)
- Add in your seasoning and salt
- Add in your Banga spices(got mine from a friend in Delta state, so it's original)
- Add in the Banga stick(popularly known as Oburunbebe and then stir completely to make sure all ingredients are well incorporated into the Banga. Then cover and bring to a boil for about 20-30mins until your juice starts to thicken
- Add in your Catfish/fresh fish if any, but it's best made with fresh/catfish, it make the meal more delicious. Cook for about 10mins
- Add the beretete leaves and stir, allow it for another 5mins, taste for salt and the soup is ready.
