Beans and yam porridge is one of the most popular african dish and mostly preferred for lunch or dinner.
- Destone the beans, wash with hot water into a cooking pot, place on fire and cook
- While the beans is cooking, cut the yam in small pieces, wash and keep aside
- Prepare other ingredients by cutting onion, blending the pepper and crayfish.
- When the beans is half done, add yam, stir and cook together till both yam and beans are almost done.
- You can then add the onion, pepper and crayfish, salt to taste, maggi cubes and palm oil. Sometimes, I'd prefer frying them separately in a frying pan and then pour into the beans and yam. Stir together and cook for a few more minutes, off your stove and dish out.
