Corn jollof

Corn is a grain widely enjoyed in so many ways, it is an insoluble fiber, which makes it a low-glycemic index food. This makes it digest slowly and does not cause unhealthy spike in blood sugar. It also contains many B vitamins, as well as essential minerals including; zinc, magnesium, copper, iron and manganese. 

It can be roasted, freshly cooked, made into pap, agidi, corn meal (swallow), it used in different cereals for babies and adult tec.

In essence, corn it very versatile and can be used in different cuisine.

  1. 2.5 cups of washed peeled dry corn

  2. Place pot of water on hot coal/gas
  3. Allow the water to boil and add the washed corn

  4. Once it boils, drain the corn and rinse with cool water.

  5. Place pot back on the coal, add 1 cup of vegetable oil and allow to heat up, then add thinly sliced onion

  6. Add 1satchet of tomatoes to it and fry for 30 sec.

  7. Add roughly blended onion, tomatoes and pepper mix, dry fish, stock cubes and salt to taste.. Allow to cook for 5-7min till the water dries but not burnt.

  8. Add the corn to the pepper and evenly mix together

  9. Add water to just a little bit above it, cover and let it cook for 30min. You can add more water if not soft enough

  10. Once it is well cooked and soft and the water have been well absolved by the corn, mix in the ugu leaves and let it sit for a min.
