Cocoyam and vegetable sauce

Cocoyam is a small tuber rich in vitamins and minerals. It is a suitable alternative to yam for those that are diabetic. It can be eaten boiled or pounded. Consuming cocoyam helps relief one from the problem of constipation and diarrhea.

Combination it with vegetable sauce give loads of be if it’s that your body will be thanking you for.

  1. Pill few tubers of cocoyam

  2. Wash and place in a pot of water

  3. Add salt to taste andPlace the pot on fire and allow to boil till soft

  4. Roughly blend combination of pepper and onion

  5. Add palm oil into a pot and place on fire to heat up

  6. Once the oil is well heated add few slices of onions and fry for 1min

  7. Pour in the onion pepper mix and add in salt and Maggie to taste

  8. Fry till water/moisture is close to zero then add choice vegetable (Nigerian spinach was used in this meal)

  9. Stir the vegetable in and allow to cook for 2min then bring down from fire.
