Coconut Rice and Beef Steak

A savory side dish made with rice, cooked in aromatic coconut milk. It is so rich, luscious and bursting with aromatic coconut flavors. You will be surprised that a Rice recipe this simple has so much flavor.

  1. The first thing you’ll have to do is slice your beef into thin pieces and marinate your beef, using your special seasoning cubes and spices to marinate the beef then keep it in the fridge or freezer and give it time to blend with the flavors . While that is done, you’ll measure out 4 cups of raw rice and start parboiling it.

  2. I decided to add some cow skin to the coconut rice, just because I felt like. Please note that this is optional, another thing you can use in place of the cow skin is smoked fish (highly recommend). So I cut my cow skin into smaller pieces and set aside.

  3. Once the cow skin is ready, you can now start preparation of the coconut milk. You can decide to buy coconut milk or extract it from the coconut by yourself. After breaking the coconut, you’ll have to cut them into smaller bits, then you use your blender to blend the coconuts. Blend it until the coconut are completely crushed, use a filter to squeeze out the milk until the coconut is completely dry.

  4. Once all your major recipes are ready, you can start cooking the coconut rice.

Using cooking butter, melt it in the pot, add your onions, peppers and leave it to fry then add your seasoning cubes and salt, add your left over meat stock, and also add your coconut milk, cover the pot and allow the spices simmer for 3mins, after the ingredients have come to a boil, add your properly washed rice (wash your rice properly so all the starch will come off) then add your cow skin and crayfish, lots of ground crayfish then cover your pot and allow the rice to cook.

In a different pan, melt your cooking butter then bring out your marinated beef from the fridge and start frying on low heat, continue to fry the beef until brown or however you like your beef steak; half cooked or over cooked. But I like mine properly cooked so I fried it till it turned brown.
  7. Come back to check your rice and make sure it’s soft and chewable and it tastes great too then you can turn off the fire because your Sweet coconut rice is ready to be served.
