This easy family healthy breakfast staple is quick to make and is most delicious and satisfying. Enjoy this classic meal with your family to begin the day.
- Mix the flour, baking powder, sugar and salt in a big bowl using a wooden spoon
- In another bowl, separate your egg white from the yolk and whisk the egg white properly till it looks like whitish foam. Set aside
- Whisk your egg yolk in another bowl, add the milk, vanilla essence, 1 tablespoon of melted butter and mix all together till it is properly combined
- Combine your wet ingredients into your well of dry ingredients and mix properly
- Slowly combine your egg white into the mix in a fold like pattern
- Place your nonstick pan on fire and put on medium heat.
- When the pan is hot add little amount of butter that can coat the pan and add 1 cooking spoon of pancake mix
- Flip the pancake to the other side when you notice a brownish color underneath. Repeat the above process until you’ve exhausted your pancake mixture
- Dice your cucumber in large bits and set aside
- For your sunny side up eggs, heat up your nonstick pan on low heat and add your 1 tablespoon of oil or butter
- When the pan is hot enough, crack in your egg and season with a pinch of salt and pepper. Cover the pan to trap the heat so it cook properly
- Do not flip the egg. Remove from pan after 5 minutes and repeat above step for the other eggs
- Serve your delicious pancakes and eggs. You can add maple syrup on your pancakes and as well always replace the cucumber with either fried bacon or hot dogs
