This is a delicious gravy that can be had with steamed rice as well as alone. It uses minimal ingredients and is very delicious. It can also be edited and infused with different ingredients of choice. Although it takes time to cook to achieve optimal flavours, the time is definitely worth it
- 1. Wash your chicken into a pot with 2 cups of water
- 2. Season your chicken with spices, seasonings and herbs as required. Cook on low heat.
- 3. Blend two onion bulbs, scotch bonnet and coconut milk in a blender.
- 4. Add this to the slowly cooking chicken.
- 5, After few minutes, add in your big dices of Irish potatoes and mushroom.
- 6. Adjust seasoning and cover to cook on low heat.
