- 50 Gram
- Pepper mix (scotch bonnet, tomato, onion and red bell pepper)
- 30 Gram
- Vegetable oil
- 1 Cup
- diced onions
- 1 Teaspoon
- Minced garlic
- 1 Teaspoon
- basil
- 1 Teaspoon
- oregano
- 1 Teaspoon
- salt/chicken seasoning
This is a minimalist option that can replace fried eggs for those days you do not have a lot of eggs to fry or it’s just too expensive. You can use ingredients that are almost readily available in the home. You can pair with any available carbohydrate in the house like rice, boiled yam, bread etc.
- 1. Heat up a frying pan under medium heat
- 2. Add your vegetable oil
- 3. Add your sliced onions and minced garlic and stir-fry for one minutes.
- 4. Add in your pepper mix and stir fry for 2 minutes.
- 5. Add your shredded grilled/boiled or fried chicken thigh/breast and cook.
- 6. Season with salt, chicken seasoning, basil, oregano, curry and thyme.
- 7. Lastly, pour in your already beaten egg and mix. Reduce fire to low heat and cover to simmer.
