Celery fried rice

This is a  vegetable fried rice recipe that has a slight twist with celery stalks. It is healthy and can stay in the fridge for up to four days. It is also very delicious.

  1. 1. Wash all vegetables including celery stalks.
  2. 2. Dice all vegetables, celery stalk and chicken sausage.

  3. 3. In a pot, add your vegetable oil on medium heat

  4. 4. Add onion slices and minced garlic to release flavours

  5. 5. Once flavours are released, add your washed and drained rice and stir fry.

  6. 6. Add seasoning, spices and herbs as desired to build flavours. Keep stirring to ensure it doesn't burn or stick to the bottom of the pot.

  7. 7. Add your chicken stock and water to cook rice. Cover with foil paper and reduce heat to low.

  8. 8. In a non stick pan, add little vegetable oil on medium heat.

  9. 9. Add diced onions and minced garlic.

  10. 10. Add diced sausages, chopped scotch bonnet

  11. 11. Add diced vegetables and stir fry. Season as desired but not too much so it can complement the already seasoned rice.

  12. 12. Once rice is cooked, add stir fried vegetables to the rice and mix gently.

  13. 13. Taste and adjust as needed. Steam for a little bit more and let rest. Serve immediately.
