- Salt, chicken seasoning, basil, oregano, curry, thyme

This is a vegetable fried rice recipe that has a slight twist with celery stalks. It is healthy and can stay in the fridge for up to four days. It is also very delicious.
- 1. Wash all vegetables including celery stalks.
- 2. Dice all vegetables, celery stalk and chicken sausage.
- 3. In a pot, add your vegetable oil on medium heat
- 4. Add onion slices and minced garlic to release flavours
- 5. Once flavours are released, add your washed and drained rice and stir fry.
- 6. Add seasoning, spices and herbs as desired to build flavours. Keep stirring to ensure it doesn't burn or stick to the bottom of the pot.
- 7. Add your chicken stock and water to cook rice. Cover with foil paper and reduce heat to low.
- 8. In a non stick pan, add little vegetable oil on medium heat.
- 9. Add diced onions and minced garlic.
- 10. Add diced sausages, chopped scotch bonnet
- 11. Add diced vegetables and stir fry. Season as desired but not too much so it can complement the already seasoned rice.
- 12. Once rice is cooked, add stir fried vegetables to the rice and mix gently.
- 13. Taste and adjust as needed. Steam for a little bit more and let rest. Serve immediately.
