Buka stew is a Nigerian stew but unlike the tomato stew , this particular stew is often served in local restaurants popularly known as “bukas,” the Nigerian buka stew is a delicious palm oil stew made with a mixture of tomatoes and pepper and often served alongside plain dishes like rice, beans and soup combos. The first step to preparing Nigerian buka stew is the palm oil base.
- Bleach your palm oil for 8 minutes, then go in with chopped onions and garlic paste. Stir fry that for 3 minutes .
- Go in with your protein of choice and fry till it's nice and brown, then take it out.
- Then go in with your blended pepper mix ( I have the recipe on my blog post).
- Season with some seasoning powder, thyme, curry and nutmeg. Cover and allow the tomato mix cook for 25 minutes or until you see the oil floating over the mix.
- Go in with your protein broth (meat stock).
- Add back your fried protein.
- Then go in with your smoked catfish ,
- Give that good stir then allow to cook for extra 10 minutes and your buka stew is ready! Serve with white rice and enjoy!
