Boiled yam and palm oil stew

Boiled yam and stew is a regular dish in a Nigerian household but for this stew ,I will be using palm oil instead of the regular vegetable oil…Palm oil stew gives the whole meal a different taste.

  1. Peel and cut your yam

  2. Put the yam in a pot,add water and boil untill soft

  4. Blend pepper, ginger and garlic together

  5. Blend fresh tomatoes

  6. Make sure you have your already cooked protein of your choice

  7. Heat the palm oil,stir in blended onions

  8. Add pepper mix,and let it simmer for 3 minutes

  9. Stir in tomato paste(optional)and let it fry for 2 minutes

  10. Add your blended fresh tomatoes and stir

  11. Spice the stew with salt,stock cube,thyme, curry, dried basil & bay leaves, immediately add your protein and let your stew cook for 6 minutes
