Yam is a special delicacy that can be either boiled, fried, roasted or pounded etc. It can be eaten with any sauce like egg, stew, fish stew etc. Depending on the form of yam you prepare.
- 1. Cut, slice and peel Yam.
- 2. Rinse yam and put in a pot, cover with water, add salt, cover and leave to boil for 25 minutes or till soft (when poked with fork it goes in without resistance).
- 3. When soft, drain the water and leave yam to cool.
- 4. Whisk your egg and get your pepper mix ready.
- 5. In a pan add your vegetable oil, diced onion, curry and thyme then pour in your pepper mix, salt and seasoning and leave to cook.
- 6. Pour in your whisked egg leave to cook for few mins, then mix all together .
- 7. Once ready, serve your is meal!
