Boiled plantain is a wonderful, starchy side dish that pairs well with any savory lunch or even breakfast which can be eaten with fried egg
- Place pot on medium heat, add water to the pot, wash the plantains and Cut off both ends.(Cut the plantain into 1-inch pieces). Leave to boil until soft (approx. 20 minutes) then Strain. Rinse to remove froth and Strain again. Remove the peels.
- Cut the fresh pepper,fresh tomatoes and onion,beat the eggs add salt and curry.heat up vegetable oil and fry the onion,Fresh pepperand fresh tomatoes.
- Fry for 3minutes and pour in the eggs. Stir and fry till is done. Serve with your boiled plantain.
