Authentic Nigerian Chicken Stew

Welcome to the heart of Nigerian cuisine! Today, we’re embarking on a flavorful journey to create the perfect Nigerian Chicken Stew. This recipe combines the richness of spices, the warmth of ginger, and the vibrant colors of peppers for an unforgettable culinary experience.

  1. In a large pot, boil the chicken with sliced onions, garlic powder, ginger powder, oregano/thyme, rosemary, curry powder, seasoning powder, salt, and water. Cook until tender, then fry in hot groundnut oil or any other oil you intend to cook the chicken stew with. Set aside and reserve the liquid (Chicken stock).
  2. Blend tomatoes, bell peppers, onions, garlic, and ginger. Pour into a pot, reduce excess water on heat, and set aside
  3. In another large pot, heat vegetable oil, and add chopped onions,and tomato paste. Stir fry for 8 minutes.
  4. Pour in the boiled-down tomato-pepper mix, and fry for about 20-30 minutes until the tomato loses its sour taste. Stir constantly to prevent burning.
  5. Add chicken stock, thyme, curry powder, add powder pepper if you want, and seasoning powder in would recommend lasor. Mix and boil for 8 minutes.
  6. Add fried chicken, and simmer for 10 minutes.
  7. Serve Nigerian Chicken Stew with boiled rice and any additional toppings of your choice e.g salad, plantain, beans e.t.c
