Amala is a local indigenous Yoruba food (south west part of Nigeria). It is made with yam flour also known as Èlùbó. Yam is peeled, sliced, washed, dried and ground into flour. It could be served with different soup such as Ewedu, Okra, Gbegiri, Vegetable, Ogbono.
- Sieve the yam flour into a bowl
- Measure 6cups of water into a clean pot. Cover the water and allow it to boil to 100•c or till it start making bubbles. Please make sure the pot handle is firm and Do not use a non stick pot for Amala.
- When the water reaches boiling point(the water will still be on the fire). Add the yam flour bit by bit and continue turning with a wooden turning stick till you get your desired texture.
- Turn the Amala very well to avoid lumps. Then sprinkle a little water and cover the pot to allow it to steam for 1minute
- Remove the cover and turn the Amala again with the wooden turn stick till it is smooth
- Serve the Amala with soup of your choice.
