AMALA, EWEDU and Gbegiri

Amala, Gbegiri and Ewedu also known as Amala and Abula is a Nigerian delicious delicacy, Common among the people of western part of the country.

  1. Wash meat , pour into a clean pot, add salt and seasoning and boil till tender.Wash fresh pepper, tomatoes and onions and blend together smoothly.
  2. Pour into a clean pot and place on fire, allow to boil till water dried off.
  3. Put 2 cooking spoon of palm oil and fry,add salt and maggi to taste,
  4. Add cooked meat, and meat stock and stir together.
  5. Add washed smoked stock fish, salt and maggi to taste and stir all together and set aside.
  6. Add 2glass cup of water into a clean pot, add washed beans and allow to boil till soften.
  7. Once beans is soften, Transfer into a blender or whisk with local broom.
  8. Pour into a clean bowl, wash the pot and place on fire.
  9. Add two cooking spoon of palm oil, add blended pepper and onion and fry.
  10. Add salt and maggi to taste, pour blended or whisk beans into the fried pepper and stir together. Allow to rest on fire for few minutes and set aside.
  11. Place clean pot on fire,add 2 cups of water, allow to boil and add shredded jute leave.
  12. Allow to cook till soften, Transfer into a blender and blend or whisk with local broom meant for jute leave.
  13. If blended, transfer back into pot add salt and maggi to taste, allow to cook for few minutes and set aside.
  14. Place clean pot on fire add two cups of water and allow to boil.
  15. Once the water has boiled,add yam flour gradually and stir with turning stick.
  16. Continue stirring till desire texture has been achieved.
  17. Allow to rest for few minutes and stir together.
  18. Wrap up bit by bit in a clean Nylon.
  19. For the serving unwrap one wrap of Amala into a plate, add cooked jute leave, Gbegiri, fish meat and stew.
