AFANG SOUP

Afang Soup is originated from the southern part of Nigeria , Efik tribe of Cross River state and Ibibio tribe of Akwa Ibom state, precisely. This is a popular dish in Nigeria and can be found in most cuisine in Nigeria and all over Africa. It is one of the soups you can easily find in Efik and Ibibio ceremonies and parties. Affang soup is very nutritious and the cost of preparing is adaptable to the number of people you’re preparing it for.

  1. Wash protein , stock fish , kpomo , snail and add that to a pot, add some blended peppers, seasoning add some water and allow the protein to cook till it's soft and tender.

  2. Add one cooking spoon of palm oil, add your properly selected , properly washed and properly cut water leaf. The water leaf should be cut in very tiny bits .

  3. Add your blended peppers, crayfish ,periwinkle, smoked fish, give it a good mix.

  4. Add seasoning to taste, season very well and some salt , give it a very good mix.

  5. Mix the contents of the pot to combine , cover and allow to come to a boil so the water leaf releases it's own juice enough to cook the soup. Please note do not add water when making affang soup the water released from the water leaf is enough to cook the soup.

  6. When the mixture has come to a boil, add the properly pounded affang and another batch of palm oil , affang soup need enough palm oil so add enough of it. Put off your gas and mix the affang to combine. The affang cooks in the steam from the boiled mixture, also this helps the affang not to over cook so it stays fresh all through it's lasting period.

  7. Cover the pot to so the affang cooks with the steam. Affang soup is ready, serve with eba, fufu or semi vita.
