Experience the richness of Nigerian cuisine with our Achi Soup Delight, a flavorful combination of tender beef, aromatic stockfish, and the unique taste of Oha leaves and Uziza. This hearty dish, thickened with Achi and infused with the essence of red palm oil, is a celebration of traditional flavors. Let’s embark on a culinary journey and create this soul-warming Achi Soup together.
- In a pot, combine the beef and stockfish.. Season with salt, maggi and black pepper. Allow it to cook until the meat is tender.
- While the meat and stockfish are cooking, pick the oha leaves and tear them into small pieces using your fingertips before washing. Wash the uziza and cut it into smaller pieces
- Once the meat and stockfish are done, add the dry fish to the pot. Allow it to boil for a bit
- Add ground crayfish to the pot, mix the achi thickner with some water until it medium consistency
- Add the mixed achi thickener and red oil to the pot . Cover and cook for about 7 minutes, stirring occasionally to prevent sticking. Add the uziza,, then the oha leaves. Stir and add salt to taste
- Take it off the cooker, and your hearty Achi soup with oha leaves and uziza is ready. Serve it with any swallow of your choice
