A lazy day moin-moin

Moin-moin is a delicious Nigerian dish made from beans,spices and other flavorful ingredients.

A lazy day moin-moin is for moin-moin lovers who can’t go through the stress of peeling the beans and blending .

  1. Pour all dried ingredients into a bowl and mix (blended beans powder,dried pepper).
  2. Pour the warm water into the step above and stir in a circular movement until there are no lumps.
  3. Whisk your egg in a separate bowl and add it into the mix above and stir.
  4. Grate your onions,ginger and garlic into the mix above and stir.
  5. Shred the sardine and add the crayfish into the mix above and stir.
  6. Add mix pepper into the step above and stir.
  7. Add salt and bouillon cubes into the step above to taste and stir.
  8. Add vegetable oil into the mix and stir.
  9. Pour water into the pot and let the water level be 1/4 of the pot and boil.
  10. Grease the muffin tin with vegetable oil. Spoon the moin-moin mixture into the muffin tin (fill each tin to about 3/4 or the tin to avoid the mix pour into the boiling water).
  11. Put the muffin tins into the pot and cover it,let it steam for 30-40 minutes.
  12. Once cooked,remove the muffin tin from the pot and allow it to cool for a few minutes before removing the moin-moin from the tin. Your lazy day moin-moin is now ready to be served! You can enjoy it as a main dish or a side dish with your favorite Nigerian food. Enjoy your meal.
